To maximize the use of existing spaces and meet the company’s various needs in establishing its new hub in the center of Chania, the design and construction of the "Thymianos" wine cellar was completed. A key aspect of the project was restoring the direct connection between the ground floor and the mezzanine by adding a new staircase in the space between the two levels. The main entrance to the store is located on Kissamou Street, featuring a newly designed forecourt with a ramp for wheelchair accessibility. The ground floor includes a centrally positioned reception area, with product display islands and floor-to-ceiling shelving along the perimeter walls. The products are grouped by various wine and beverage types, with a dedicated section for displaying different cigar varieties. At the rear of the ground floor are utility spaces, including a restroom and a goods elevator connecting to the basement, where the storage areas are located.

ΘΥΜΙΑΝΟΣ ΚΑΒΑ

Με στόχο την καλύτερη δυνατή αξιοποίηση των υφιστάμενων χώρων για την εξυπηρέτηση των διάφορων αναγκών της εταιρείας κατά τη δημιουργία νέου πυρήνα της στο κέντρο των Χανίων, πραγματοποιήθηκε ο σχεδιασμός και η υλοποίηση της Κάβας «Θυμιανός».
Από τις αρχικές προθέσεις ήταν η επαναφορά της άμεσης σύνδεσης του ισογείου με το πατάρι με την προσθήκη νέας κλίμακας στο κενό μεταξύ των δύο επιπέδων. Η κύρια είσοδος στο κατάστημα γίνεται από την πλευρά επί της Κισσάμου μέσα από νέα διαμόρφωση στην πρασιά με ράμπα προσβάσιμη από ΑΜΕΑ. Στο ισόγειο χωροθετείται η υποδοχή κεντρικά στον άξονα κίνησης, με νησίδες προβολής των προϊόντων και ράφια σε όλο το ύψος των περιμετρικών τοίχων, ομαδοποιημένα σύμφωνα με τις διάφορες ποικιλίες οίνων και άλλων ποτών, με ξεχωριστό τμήμα για την έκθεση διαφόρων ποικιλιών πούρων. Στο πίσω μέρος του ισογείου χωροθετούνται βοηθητικοί χώροι όπως WC και ανελκυστήρας προϊόντων από και προς το υπόγειο, όπου βρίσκονται οι αποθήκες.

Στην ίδια λογική αξιοποίησης των περιμετρικών τοίχων για την προβολή προϊόντων διαμορφώνεται και το πατάρι και ειδικά στο χώρο γύρω από το κενό προς το ισόγειο. Επιπλέον στο πατάρι χωροθετείται χώρος γευσιγνωσίας, ο οποίος μπορεί και να συνδέεται με τον υπόλοιπο χώρο του επιπέδου. Ο χώρος αυτός μπορεί να λειτουργεί και ως αίθουσα σεμιναρίων barista/mixologist, αφού στο χώρο της τραπεζαρίας υπάρχει «κρυφό» μπαρ με καφετιέρα και προτζέκτορας με πανί που χρησιμεύει και για τις δύο λειτουργίες του χώρου. Στο επίπεδο του παταριού υπάρχουν επίσης χώροι γραφείων.
Ως προς τα υλικά, χρησιμοποιήθηκε κυρίως ξύλο για τα έπιπλα και διαφανείς, ημιδιαφανείς ή συμπαγείς τοίχοι ανάλογα με την ιδιωτικότητα ή διαπερατότητα που αρμόζει στον κάθε χώρο. Επιλέχθηκαν ουδέτερες αποχρώσεις σε υπόλευκο ή ανοιχτό γκρι χρώμα, με γήινες αποχρώσεις του καφέ ή κόκκινου σε επιλεγμένα σημεία. Εξωτερικά, η κύρια όψη είναι γυάλινη στο ισόγειο, για την βιτρίνα του καταστήματος, ενώ σε όλα τα υπόλοιπα σημεία υπάρχει συμπαγής τοίχος για τον έλεγχο του φωτός και του κλίματος εντός του καταστήματος. Σε τμήμα της όψης έχει σχεδιαστεί ένθετη κατασκευή με ενδιαφέρον μοτίβο για τη σηματοδότηση της έκτασης που καταλαμβάνει το κατάστημα.

Continuing the theme of utilizing perimeter walls for product displays, the mezzanine has been designed with particular attention to the area surrounding the opening to the ground floor. This level also features a tasting area that can connect to the rest of the space. Additionally, this area can serve as a seminar room for barista and mixologist training, as the dining space includes a "hidden" bar equipped with a coffee machine and a projector with a screen for dual use. Office spaces are also incorporated on the mezzanine level.
In terms of materials, the design primarily utilizes wood for the furniture, along with transparent, semi-transparent, or solid walls depending on the desired privacy or openness for each area. Neutral colors, such as off-white and light gray, are complemented by earthy tones of brown and red in selected spots. The main facade at the ground floor features glass to create a storefront display, while solid walls in other areas help control light and climate within the store. A section of the facade includes an inset design with an interesting pattern to highlight the space occupied by the store.
